The kitchen

Most restaurants pick a fire. We kept both.

On one side, a clay tandoor that runs hot enough to seal a marinade in ninety seconds. On the other, an open charcoal grill for tenderloin, grouper and shrimp pulled from Caribbean water. The same pass, the same night, the same table.

North Indian cooking done the slow way — marinades left overnight, breads slapped to the wall of the oven, curries built from whole spice rather than paste.

The bar

Eleven seats at the marble, and a list that runs past midnight.

The bar keeps its own seats for walk-ins, which is where most people end up while the grill catches up. Cocktails sit at the front of the Prime list; the wine and the beer are behind it.

Open sixteen hours. It should not feel like one long dinner.

Breakfast

Eggs, avocado toast, smoothie bowls and proper coffee before the mall fills up. The quietest two hours of the day at Zuikertuin.

All day

Tandoor and curries, pastas, burgers and salads. Lunch for the offices nearby, thalis for the table, takeaway for the drive home.

Prime nights

Candles out, grill up, bar full. Steaks, seafood and the wine list — the service that anniversaries and birthdays get booked for.

Private booths along the wall, a long marble bar for late plates, and a blossom tree over the entrance. Enough room for a family of fourteen, quiet enough for a table for two.
